Sautéd Scallops with smoked salmon and almonds
Scallops are the right food for celebration especially for the new year´s eve. They can be had as main course for the whole family or a starter or simply as a romantic meal for lovers of all ages. They are delicious any way you enjoy them.
Scallops are rather expensive and therefore we eat them not very often, but when we do we better do it with style. Here is a wonderful recipe from “The new Icelandic Cookbook” which is full of very good Icelandic recipes of seafood of all kinds.
400 g scallops
50 smoked salmon
3 g almond flakes
1 dl white wine
2 dl cream
1 tsp cornflour
150 g puff pastry
1 egg yolk
2 sprigs chervil
oil for frying
Spread the puff pastry with the egg yolk and cool for ½ hour. Bake at 180° for 15-18 minutes. Cut smoked salmon into pieces. Put the oil in a deep pan. Heat well. Fry the scallops rapidly for 15 seconds. Remove from the pan. Pour the white wine into the pan with the cream and allow to simmer for a minute. Thicken with cornflour.
Roast the almonds in another pan and add to the sauce together with the salmon and scallops. Season with salt and pepper. Fill each pastry bun with a layer of the mixture of ingredients.
Serve with green salad of your choice.
