Fried saltfish with garlic and chillies

Saltfish makes wonderful meals of all kinds with recipes from the Iberians and Italians as well as the Nordic countries. The fact is that the most of the salted cod eaten in southern Europe comes from the north, from countries like Iceland and Norway. Here we have a very good recipe from the new Icelandic cookbook. The recipe is for two persons.

Ingredients:

400 g saltfish fillets
2 potatoes
6 cloves garlic
2 red chillies
2 green chillies
2 tbsp parsley
1 tbsp butter
1 tbsp oil for frying
2 dl tomato juice
2 cl white wine vinegar
chives

Method:

Cut the garlic cloves in two. Slice the onions and chillies. Chop the parsley. Fry the saltfish and the potato slices in the oil and reduce the heat. Sautée the garlic and the chillies. Add butter. Pour in the vinegar and the tomato juice. Arrange the potatoes on the plate and the fish on top. Pour the chillies and garlic sauce around the fish and garnish whit the chives.
